Grilled chicken salad with bacon & blue cheese dressing
Not a lot of creativity in my kitchen lately. Sometimes it just takes some leftovers to inspire. I just threw together this sun-dried tomato-basil stuffed chicken sausage skillet with mushrooms, baby tomatoes, and green beans in a white wine reduction in 15 minutes. It was fantastic.
Made peanut chicken zoodles for lunch. In addition to the zucchini, there’s a little cabbage, red bell pepper, fresh minced garlic, and a sugar-free sauce made with dark sesame oil, chili garlic paste, ginger, and soy sauce. Only things missing was peanuts for garnish (no biggie, since I used crunchy peanut butter) and cilantro, so I used some dried Thai basil leaves. Recipe will be posted soon.
