Round-up – Nothing spectacular going on in the kitchen this past week …
Typical salads at lunch (grilled chicken, greens, avocado, radish, cheese, baby tomatoes, green onions), I made another big batch of garlicky green beans to go with a few meals, plus beef with tomatoes and zucchini was dinner a couple nights. Radishes fried ’til crisp in bacon fat went with my breakfast today.
This evening, I attempted (new to me) peanut butter cookie dough truffles. I’ll make a mushroom and Swiss quiche and some Italian sausage egg muffins this weekend, and if I’m not too peanut-buttered-out (easy for me, I’m not a big PB lover & I did too much taste-testing tonight), I’m going to attempt sesame peanut chicken with zucchini noodles later in the week.
Felt like picnic food for dinner. BBQ pulled pork from a 7 lb shoulder roast I made over the weekend (it didn’t need the cheddar, I also added hot sauce before eating it), with some green beans sautéed in butter and garlic, homemade coleslaw, and sugar-free sweet tea.

Made sugar-free coleslaw yesterday to go with some bbq pulled pork I had cooking in the crockpot overnight. Turned out great. Am bringing another batch and some pork to Mom’s for lunch today.
