Breakfast is usually at noon-ish around here. I had a 3 egg omelet mess the other day (I suck at omelets) with pepper Jack & mushrooms and some bacon-fried radishes on the side. Always bacon. Today will be egg muffins made with hot Italian sausage, peppers, mozzarella, and sundried tomatoes, which I whipped up yesterday.

My new fave thing (new to me) is radishes fried in bacon fat.

My new fave thing (new to me) is radishes fried in bacon fat. This batch was actually half butter/half bacon fat. Just did it with some washed & quartered fresh radishes in a hot skillet. Delish! Sort of like low carb potato wedges/American fries that you may be missing from your breakfast plate.

Busy work week meant making sure I had things ready to go for lunches—usually salads or leftovers.

Busy work week meant making sure I had things ready to go for lunches—usually salads or leftovers. Monday’s salad had chicken and mixed olives, mushrooms, pimentos, and green peppers. In the case of Tuesday, it was soup—my caldo xóchitl with fresh avocado and hot sauce, to be specific. Wednesday was leftover Spam fried “rice” (cauliflower) which was fantastic! (I’ll post the recipe soon). And sometimes, lunch is just a few bites of this and that on a plate… leftover grilled chicken and cucumber, tomato, and avocado with hot salt. Today’s salad (last pic) was simple, just spinach, romaine, onion, tomato, green pepper, some evoo dressing and mozzarella. I snacked on some pepperoni and cheese afterward.

Lunch was a new thing I threw together, took about 15 minutes.

Lunch was a new thing I threw together, took about 15 minutes. I browned a quarter pound of ground beef with a little onion, added 1/2 cup of stewed tomatoes (I used the kind with roasted garlic), some oregano, dash of allspice, and hot sauce, and half a small zucchini, sliced. Then I covered it to simmer a bit, served it with some salt & pepper.
