Roasted Red Pepper Hummus – A low carb treat and one thing people always beg me to bring to parties.

Yesterday for lunch, I had a salad with grilled chicken, white mushrooms, tomatoes, onions, tomato pesto vinaigrette, and some grated Asiago.
Dinner featured a perfectly cooked pork chop
Made a pot of chicken fajita soup. Great use of leftover chicken and vegetables. The broth was made from bones of the bird I roasted recently, and I simmered some dark & white meat in it, then sautéed half a sweet red bell pepper, one pasila pepper, two Serrano chiles, a little celery, garlic, and onion, and threw those in with a little smoked paprika and oregano. Finished with one can of Ro-Tel and a generous squeeze of lime.
No dinner tonight, as lunch was filling enough, but I wanted something sweet, which is kind of rare for me. I made this chocolate strawberry dessert again! Took some whole milk ricotta and stirred in a couple tablespoons cold coffee, a few drops of stevia, and two teaspoons unsweetened cocoa powder, mixed it all together, and topped it with thawed frozen strawberries and their juice. #lazyketo
