Been awhile since I shared meal plans (low carb/keto dishes) to this collection. Skip, if not interested.
After the last two trips to the farmers market, I have amassed a crap-ton of vegetables to include star in dishes for the rest of this month (maybe longer, since I’m blessed to have a modern kitchen with one of those neato things called a freezer—and my new one is much bigger than my old one, yay!). So here is the very ambitious list of things I am determined to make, starting this weekend…
Stuff I’ll make and freeze for later:

• Spinach feta pie
• Mushroom & Swiss quiche with bacon
• Pepperoni pizza zucchini muffins
• Polska Kielbasa w/bacon & butter-braisd paprika cabbage
• Spicy beef & cauliflower skillet (sort of a Mexican “rice” casserole in a pan)
• Zucchini with Italian herbs & cheeses bake
• Ham & broccoli egg muffins
(for my sister, who is home recuperating from surgery for the next week+)
• I will also rice up and freeze some cauliflower
Stuff to make and eat this week:

• Italian sausage & beef ragu-stuffed zucchini boats
• Creamy chipotle broccoli salad with bacon
• Garlicky sauteed green beans with mushrooms
• Low carb flatbread pepperoni/mushroom/bell pepper pizza
• Pumpkin bread
• Chuck burgers & collard greens with bacon
• Avocado “taco” bowls
(I have homemade salsa, peppers, and cheese, just need to brown up some seasoned ground turkey)

Also, one of my clients (the one who keeps me the busiest) is out of the country until the 21st, so I’ll be able to stretch out some of this labor into the early part of the week.
Avocado taco bowl! That’s a winner!
