BJ’s Caffè Americano ice cream
Sugar-free and nearly zero-carb. No ice cream maker needed, if you don’t have one (skip to second set of directions if not using an ice cream maker) I’ve made it both ways!
You can certainly use regular liquid stevia or powdered form, but the glycerite keeps the mixture from being too hard when frozen.
Makes 1 pint
Ingredients
4 large egg yolks
1 cup heavy whipping cream
1 cup (8 ounces) brewed coffee, cold
1/2 teaspoon vanilla extract
1 tablespoon instant espresso powder
(or very finely ground coffee)
4-6 drops liquid stevia glycerite (important)
Directions
Separate the egg yolks from the whites and reserve the whites for another use.
In a large bowl, add all ingredients. Using a hand mixer or whisk, blend together well. Cover well and chill in refrigerator for 4 hours or overnight (important step if using an ice cream maker). Once fully chilled, proceed making ice cream using your ice cream maker’s instructions.
Before serving, you may wish to let the ice cream stand out 5-10 minutes before eating. You can also place remaining servings into half-cup freezer-safe containers to reduce time to wait until ice cream is as soft as you’d like to eat.
Directions for no ice cream maker:

In a large bowl, add all ingredients. Using a hand mixer or whisk, blend together well. Cover well and place in refrigerator 2-3 hours.
Transfer chilled base to a freezer safe container and freeze for 30-40 minutes.
Take mixture out of the freezer. With a stiff spatula or whisk, break up the ice crystals and mix very well. Place back in the freezer for another 30-45 minutes. Repeat this two more times or until ice cream is the desired consistency, mix again, and serve.
When freezing leftover servings, note the ice cream made this way will become very solid and frozen and may need mixing again.

Heavy whipping cream doesn’t have carbs in it?
Most brands say <1 gram net carbs per TB.
Bobbi Jo Woods hmm… I looked it up and it said one cup. 6 g isn’t a lot but it still needs to be counted into carb intake. Also when I further looked it looks like some sites say 7 but if you look on the carton I guess that should be your answer.

Do you have a recipe for any other flavor?
Salvador Melo you could certainly double the vanilla, use half & half or water instead of the coffee and have vanilla ice cream. Or add cocoa powder or strawberries for chocolate or strawberry?
I have some strawberry and some chocolate flavored whey protein powder. I may have to experiment and get back to you.
