Breakfast tortilla thing – Yesterday, I wanted something different for breakfast. So I got creative. A cast iron pan is great for something like this. Dig up leftover veggies, cheese, meat (whatever you like) and there’s a method below (Catherine W. asked, so I’m sharing):
I ground up some leftover steak with some chili powder, garlic, cumin, and hot sauce, then I heated up a non-stick skillet and griddled some onions and mushrooms and set them aside, then heated up the pan with some oil and put in a corn tortilla to get it toasted up a bit.
I sprinkled some Monterey Jack cheese (or any kind you like) onto the tortilla, then added the meat and veggies and some eggs (I already had some leftover scrambled eggs, but you could crack a fresh one in there). If you decide to crack an egg on top, let it cook to your desired done-ness, and then serve with hot sauce, salsa, crema, whatever you like.
I decided to keep making a mess, and sprinkled a bit more cheese over the eggs, then put another tortilla on the top, then flipped the whole thing over to crisp up the other side. I ate it with salsa, sour cream, scallions, and sliced avocado. All the stuff I had was enough to make two tortilla in a pan thingos. I saved the meat and veggies I didn’t use yesterday, and made another one today 🙂
