Busy work week meant making sure I had things ready to go for lunches—usually salads or leftovers. Monday’s salad had chicken and mixed olives, mushrooms, pimentos, and green peppers. In the case of Tuesday, it was soup—my caldo xóchitl with fresh avocado and hot sauce, to be specific. Wednesday was leftover Spam fried “rice” (cauliflower) which was fantastic! (I’ll post the recipe soon). And sometimes, lunch is just a few bites of this and that on a plate… leftover grilled chicken and cucumber, tomato, and avocado with hot salt. Today’s salad (last pic) was simple, just spinach, romaine, onion, tomato, green pepper, some evoo dressing and mozzarella. I snacked on some pepperoni and cheese afterward.
