Christmas shopping done, didn’t want to cook much today. Lunch was soup and salad–sis loved the soup (https://goo.gl/IvA6U1). Dinner is another one-pan wonder. Leftover pulled pork is versatile, and since I had some pasta, Ro-Tel, and red beans in the pantry, I let it go swimming in the same skillet I used for bacon this morning along with some stock, smoked paprika, cumin, oregano, cayenne, onions, and garlic. Oh, and some jalapeños & fresh flat-leaf parsley, ’cause green stuff Turned out delish, now stuffed. Plus, there’s heaps left over for tomorrow, which will be super-busy, as Mondays tend to be, for me.
