Made them with some coarse flour that I ground out of oats instead of wheat flour, and a bit of molasses instead of brown sugar, which may be why they’re darker. Not trying to change things up, just using what I have. Mine were a little crumbly, but still tasted great. This made 12 regular-sized muffins, and they were good for breakfast , make a decent snack.

I should make these for my wife, who despises zucchini.
They just really add structure and moisture. Zucchini doesn’t add much flavor to them at all
