Dinner the other night was pretty good. Beef browned with chili powder, cumin, red pepper, oregano , with some green peppers, onions, and tomatoes. Added in two cups of grated fresh cauliflower and let it steam for a bit, topped with shredded cheddar, olives, pickled jalapeno, and cilantro. I had a little bit in a bowl with sour cream and salsa on top.
