Doing the one-pot dinner again, tonight. It’s mushroom garlic linguine with herbs and spinach, cheating with frozen thawed spinach, since grocery delivery day is Wed. And yeah, that’s a Parmigiano-Reggiano rind, I tossed it in at the end. I like to do that with soups and stuff, figured it would be good here, too.

Looks absolutely gorgeous! Never crossed my mind tossing in cheese rind, tossed out a grana padano rind a couple of days ago. We do save our prosciutto rinds for soup.
