Glazed Ham the Low Carb Way

At the holidays in my family, it’s always turkey or ham. In the case of ham when eating low carb/keto, the sugar levels of ham can be something to contend with if you really love to eat a good amount of it during the festivities!

If you’re going to buy a ham, here’s my recipe for glazing it so you don’t wind up with even more sugar than you already will get from a cured ham. I recommend anyone buying sliced/glazed hams to just get an unglazed cooked shank leg or bone-in half ham instead. If your ham comes with a glaze packet, toss it and glaze it on your own—it’s much better, IMO.

I mixed the following & spread it on a scored 8 lb ham after cooking until 130 F (about 1 hour)

2 tsp Dijon mustard
1 TB apple cider vinegar
1/2 tsp ground allspice
1/2 tsp molasses
3/4 cup Swerve

(you can skip the molasses if using Swerve Brown or Lakanto Golden Monk Fruit instead of the white kind)

Mix into a paste and brush on the ham and continue baking until 165 F internal temperature. Let rest before slicing.
