Keto chocolate mint bark fat bombs/meltaways

This is not a dessert for everyone. It’s pretty fatty, not very sweet, and meant for people who are fat-adapted and do not eat sugar. If you’re not on a keto lifestyle (high fat/low carb/minimal protein), you may find these kinda oily and gross. If you LOVE fat, and fat bombs/not-very-sweet treats, these are for you.

I took 12 sugar-free Altoids mints and crushed them up in a bowl and added 3 ounces coconut oil and melted the mixture in a double boiler.

Then I measured out 2 ounces butter, 1 ounce of dark chocolate (I just used 4 squares of Baker’s Unsweetened bar, chopped finely), and 2 teaspoons of pure stevia powder, and added it to the coconut oil mixture and stirred until melted, then poured it all into a parchment-lined loaf pan, and set it in the freezer.

After 10 minutes, I pulled out the parchment, laid it on the chopping block, cut the bar of chocolate into squares, then put them back into an airtight plastic container and back into the freezer, where they’ll keep for weeks. If I had some neato tiny silicone ice cube or candy molds, I’d use those, but I don’t. Added to my Amazon wish list!

The mixture made 22 squares. See the pic showing the squares in a tiny ramekin? Those ramekins hold 2 tablespoons, to give a better idea of serving size. I bought those for myself two years ago, when I started measuring all of what I eat – they’re great for salad dressing, condiments, etc.
