Keto meals – What did I eat today?

I asked people who follow me online if they’d like to know what keto meals I eat in a day/week, and the most responses were “YES,” so here we are.

I’ll post just what I ate over the weekend, and then pick up with a bit of retroactive meals from the last few weeks.

I figured it would help people get some keto meals ideas. I will also include links to recipes as they are posted. Enjoy!

Breakfast – Friday

I make egg muffins once every month or so, and freeze them. Then I take a couple out of the freezer to thaw in the fridge two or three at a time overnight so I can reheat them in the microwave in the mornings. It’s nice because I feel like I’m having a hot breakfast, but it’s ready to eat fast where I can grab them on the go or enjoy while working at my desk. Anyway, this is what they look like, give or take a couple of ingredients.

The batch I made most recently was ham & jalapeno egg muffins. I omitted the cheese and used half the whole eggs called for to lower the fat, then added in a few liquid egg whites to up the lean protein level, making them a practically perfect PSMF breakfast.

Lunch – Friday

I was pretty busy on this day because I worked until 3 p.m. and then basically spent two hours outside digging and planting. So by the time I was finished with all of that, I had zero energy to go in the kitchen and work on preparing something that’d usually take a minimum of 15 minutes (typical lunches for me in warm seasons are salads, salmon burgers in a skillet, or some tuna with celery or lettuce).

I purchased this No Man’s Land beef jerky the night before while out running errands, and figured it would be perfect. I was right. It filled the crevices of hunger with 40+ grams protein total for the meal, yet without much fat at all. Yes, I ate the whole bag. For 2 grams carbohydrate per 1 oz, it is the lowest carb jerky I’ve ever purchased, and it made a great low carb and PSMF-friendly lunch.

Dinner – Friday

I had two burger patties with salt, pepper, and a slice each of American cheese melted on top. Definitely not ideal…oh well.

I’m also trying to quit dairy soon. It is a struggle for me (I tend to overeat it and it isn’t helping me with my goals)

Breakfast – Saturday

I was actually quite busy this day, but thanks to already having had PSMF French Toast made a few days before, I just had to nuke some turkey sausage patties to go along with it.

Pictured is the cooking of both, but the only cooking I had to do this day was pop a couple pieces of each into the microwave for a bit to reheat. PSMF is protein-sparing modified fast, and the bread used in this is pure egg whites from fresh eggs + some egg white protein powder (basically powdered egg whites).

PSMF bread / rolls recipe here – to make rolls, or bread (which can then be sliced and made into French toast).

Lunch – Saturday

I usually spend part of Sundays batch cooking things that I can eat throughout the week, but I got a jump on it and decided to make a big pot of ragù sauce since I had a bunch of zucchini to eat, which I spiralized into noodles (zoodles) and that was lunch. I also made a big batch of taco beef to use on salads and in pork rind nachos.

Dinner – Saturday

I had sheet pan chicken fajitas for dinner (recipe soon!), with some nonfat Greek yogurt in place of sour cream, and chopped tomato. The pan here shows about 3 servings on it, which keep in the fridge nicely and are great leftover, even cold.

Breakfast – Sunday

I was not hungry at all this day until around 11 a.m., which is weird, because at my age, and for as long as I’ve done keto, I’ve come to do much better by not skipping breakfast as much…thanks, old lady hormones!

Anyway, I was doing chores and things (planting and watering the garden) and kind of lost track of time… and then my stomach started rumbling, and that’s when I decided to fire up the grill – I had about half of a NY strip in the fridge from a few days before, so I grilled that up. While my steak was cooking, I made an omelet with 1 whole egg & 2 whites, with chives and a little mozzarella in the middle.

Dinner – Sunday

Since breakfast was huge and really satisfying, I wasn’t even hungry until just about 6 p.m. so I had a small taco salad. About 1 1/2 cups of iceberg, some chopped tomato, a few grams of jalapeno, radish, & onion, 4 ounces of beef taco meat (80/20), and shredded Monterey Jack.

    Hi BJ–Came to your page via link in Telegram. I’m very interested in your meals! Thanks for sharing what you eat and the ingredients. I especially like the chicken fajitas idea, since I have a lot of wonderful bell peppers from my CSA and need a way to make sure they get eaten! Thanks!
