Lazy woman’s stand-up pseudo-Cubano for lunch. Say what? I have been daydreaming of a Cuban sammy since going low carb, so when I saw this glorious thin-sliced Cuban roast pork from Metro Deli on sale at Lunds & Byerly’s, I had to get some in my last delivery order. Lunch was me standing by the kitchen counter and eating some pieces of it with homemade sliced pickles, squirting yellow mustard onto every bite! It did a good job of killing that craving.

There’s still almost half a pound left, and although I’m out of Swiss cheese, I can get some this week, and I have ham in the freezer, so next time, I’ll wrap that all up in lettuce or a low carb wrap (since I don’t really do bread) for a proper taste. Or maybe I’ll try Carolyn’s panini version: https://goo.gl/rdT3GE

    That looks delicious. It would make for a glorious, pressed Cuban sammich. However I do not think they make low carb, traditional Cuban bread.

    I could do the lettuce wraps for sure though.
