Made a pot of chicken fajita soup. Great use of leftover chicken and vegetables. The broth was made from bones of the bird I roasted recently, and I simmered some dark & white meat in it, then sautéed half a sweet red bell pepper, one pasila pepper, two Serrano chiles, a little celery, garlic, and onion, and threw those in with a little smoked paprika and oregano. Finished with one can of Ro-Tel and a generous squeeze of lime.
