Made a pot of veggie soup with pesto chicken meatballs, tomatoes, red peppers, carrot, celery, onion, mushrooms. I threw a handful of baby spinach leaves into a bowl before ladling some soup on top. Good use of chicken broth that has been crowding up my freezer… I took a couple jars out last night to thaw.
