Made BLT pitas over the weekend, forgot to post 😉 I also made two batches (this week and last) of cucumber/tomato salad with a little bit of chopped red onion, olive oil & apple cider vinegar – keeps in the fridge a few days nicely, and I just toss some crumbled feta on top when serving.
The mini pitas are by Joseph’s Bakery and 4 g carbs each (www.josephsbakery.com). Yes, they have wheat in them (also oat fiber and flax), but I only eat them maybe twice a month or less (they freeze NICELY).

I love feta cheese. I actually think it’s my most favorite cheese on earth—- right up there with Swiss cheese. Yum
