Marinated mozzarella cubes
This makes a small batch – about 1 cup, feel free to double it (or more), for entertaining. I just made enough for me to last a day or two. That’s about how long it stays best in the fridge, in a canning jar. Take it out and let it sit 15-30 minutes before serving, if the mixture solidifies a bit (mine did). I also added about 1 tablespoon of chopped roasted red pepper from a jar, to mine.
1 tsp parsley
1/2 tsp red pepper flakes
1/2 tsp basil, dried
1/2 tsp Penzey’s Mural of Flavor (or no-salt lemon pepper)
1/4 tsp garlic powder
1 tsp dried parsley
5 oz fresh mozzarella, cubed
1/3 cup olive oil
Makes 6-8 servings
125 cals, 1 g carbs, 0 g fiber, 13 g fat 3 g protein per serving
