Chili verde chicken enchiladas
(chicken thighs in pressure cooker w/Anaheim chilis, jalapenos, serranos, tomatillos, onion)
Baked tortilla chips and salsa
(leftover tortillas and tomotoes/jalapenos/onions)
Beef stir-fy
(cube steak, cabbage, carrots, scallions, mushrooms, peas, brown rice)
Butternut squash ravioli and garlic green beans
(I cheated and bought the pasta frozen at the corner Italian market where they’re made fresh every week–the green beans are fresh)
Lunches:
Turkey sandwiches (w/red pepper mayo, dill planks)
and Greek salads (spinach, Campari tomatoes, red onion, feta, oregano/lemon/evoo vinaigrette)
Snacks:
– Hummus w/pita and carrots
– Celery sticks w/tahini honey dip
– Cherry tomatoes & cucumber
– Red grapes
– Yogurt
(fml if I wind up with chips and ice cream–the least two are on my list to get delivered tomorrow)
Breakfast:
Veggie egg bake
Broccoli, red & yellow peppers, carrots

Fanks. I’m being ambitious, though…I may actually cook up all this stuff and just freeze some for later vs eating it. But I like variety
As of right now, I’m baking cupcakes and about to decorate them.
24 are for an order and the rest I’m going to distribute to my new neighbors.

It’s not a frenzy, I just really don’t share my menu much. I plan meals weekly, shop online, get my order Monday or Tuesday, and do most of the prep and cooking on weekends
