Nothing too exciting in the kitchen, lately. Egg muffins or bulletproof coffee for breakfast, lunch has been salami and cheese/pickles, or else taco salad or spinach salad, occasionally turkey or salmon burgers cooked in coconut oil, with relish or sauerkraut on the side. Dinners have been salads or leftovers.

I made this cheesy sausage spinach casserole Monday, with hot pork sausage, Ro-Tel, and pepper Jack cheese (not very pretty, but really tasty), and last night, I sauteed some green beans in butter and garlic. Had the leftovers for lunch today (beans topped w/slivered almonds).

My version tastes like a richer, slightly buttery version of International Coffees Suisse Mocha
