Pork carnitas bowls for lunch yesterday – pan-fried 3 oz of pulled pork in some fat (bacon grease is good) til a little crisp around the edges, toss on some cheese (this is a blend of cheddar, Asadero, and queso quesadilla) and chopped jalapeno or salsa (this is homemade tomato salsa) and maybe sour cream, for a quick low-carb, high-fat lunch (3-4 net g carbs, for the whole meal). Was waiting for avocados to ripen on the counter, or I’d have added some.
