I’m stopped for a few minutes because everything was chopped and prepped, but I forgot to re-constitute the shallots (air-dried, very nice ones from Penzey’s) So I turned off the saute pan for a bit while those plump up in hot water. Oops. Then it’s just a few minutes to casserole-into-the-oven time.
