Crispy Egg Roll Wrap Sammies
My Crispy Egg Roll Wrap Sammies are low carb versions of a treat I was inspired to make last fall by Nadiya Hussain, and have been enjoying ever since. I make them once in a great while when I’m craving a tortilla wrap style breakfast sandwich. These take 5-10 minutes, tops, and best of all, you can customize them to your tastes and what you have on hand. The recipe is for a single serving, just multiply it to feed more people. INGREDIENTS
(per person)
2 large or 3 medium eggs
Dried parsley or other herbs to taste (I used dried basil)
Garlic powder
1 low carb tortilla wrap
Grated cheese, such as Monterey Jack or cheddar
1-2 tablespoons butter, lard, or tallow, for frying
Salt to taste
Optional fillings:
Sun-dried tomato paste or salsa (I mixed a little tomato paste with chili garlic sauce)
2 large mushrooms, button style or cremini, sliced
Handful of kalamata olives, sliced
DIRECTIONS
Prepare your fillings, and beat the eggs in a medium bowl or measuring cup with a pour spout, adding in your seasonings or herbs.
Heat a pan over medium-high, and add your fat.
Thinly spread the tomato paste over one side of the low carb tortilla wrap.
Once the fat is melted and starts sizzling, gently pour in the beaten eggs, and let them cook until starting to bubble up around the edges.
Top the eggs with your fillings. If using cheese, add it now.
Lay your tortilla wrap, spread side-down over the eggs and press gently. Continue to cook until the egg has set underneath (you can check occasionally by using a soft spatula around the edges to lift up and have a look).
Once done, lay the egg wrap tortilla side down on a paper towel lined plate for a moment. Once it’s cooled down just a bit so as not to burn your hands, gently fold up/roll the egg wrap up and cut into halves. Serve hot and enjoy.
Notes:
You can use any fillings you like, such as ham, salami, prosciutto, onions, tomatoes, etc.
These won’t be great leftover because low carb wraps have a bit of a different texture. In fact, they should be eaten hot because the crispiness does wear off a bit if left to sit for too long.
