Keto Beef & “Bean” Burritos
Keto Beef & Bean Burritos – no beans! No flour tortillas! No kidding!
I hadn’t had a beef & bean burrito in so long that I didn’t really miss them and probably might have been able to tell the difference between one of those and one of these keto beef & “bean” burritos… they’re not quite an equal replacement, but they’re still delicious in a slightly different way and still fill that craving.
“Hold up… no beans?,” you say?
“No tortillas? Then how the heck did she do ‘keto’ beef & bean burritos?!”
Well, the “beans” are made from veggies…courtesy of Maria Emmerich and her recipe for refried “beans,” and in place of the tortillas are my Egglife copycat egg white wraps recipe (although, if you don’t want to make them yourself, you can simply buy the wraps and use those)!
Then I just added my own spicy taco seasoned beef to the burrito. Put it all together, and you have a pretty good facsimile for a beef & bean burrito…but totally keto!
INGREDIENTS
Filling:
1/2 lb ground beef
1 tablespoon taco seasoning
1/3 batch keto refried “beans” recipe
Tortillas:
1 half batch Egglife copycat egg white wraps recipe
DIRECTIONS
Prepare the taco beef by browning the beef in a skillet and breaking it up into small pieces while it browns. Add the taco seasoning and 3 tablespoons water, stir, and cover. Reduce heat to med-low and cook about 5-8 more minutes or until water is absorbed and meat is tender.
Divide the refried “beans” into thirds and scoop out 1/3 onto each tortilla, then add 1/3 of the beef, then add cheese, hot sauce, etc, as you like (and can fit) and fold into a burrito. Repeat for all three tortillas.
Place each burrito, seam side-down, on a nonstick skillet heated to medium-high for a couple of minutes on each side until the burrito fillings are cooked through and the tortilla part is golden brown.
Enjoy hot! Makes 3 burritos.
I’m not sure how these will keep for leftovers, I only ate them fresh (but I did use leftover cold Egglife copycat wraps).
Cook seasoned ground beef
Spread the egg white wrap with the “beans,” then add beef, and other toppings you like
Heat/brown the burritos on both sides (optional, but I like them better this way)
Keto burritos! I like mine with hot sauce.
