Years ago, when I started making fridge pickles, it was after visiting the farmers markets, where there would be bumper crops of cukes available every summer, and I saved a ton of money when buying fresh local cucumbers that way and making my own quick fridge pickles.
The best part about homemade quick fridge pickles? You get to make them YOUR way. Some store-bought pickles are just not as good, honestly.
Anyway, back then I was looking for non-canning recipes for a quick brine for this type of pickle, which is called a fridge pickle for a reason—these pickles are are not canned and intended for long shelf-life, but instead made in rapid fashion and refrigerated immediately to last in the fridge for a short period (a few weeks, not much more).
So in my search, I found one online a few years ago and I modified it to work within the confines of a small batch, since so many of the traditional pickle recipes available require bushels of cucumber.
