Italian Chicken Meatballs
These juicy and flavorful low carb chicken meatballs are a great way to use ground chicken and add fun to soups and your favorite sauces to enjoy alone or on top of zoodles, spaghetti squash, or other favorite low carb pasta substitute. Just mix, roll, and bake!
INGREDIENTS
1 pound ground chicken
2 teaspoons dried basil
Salt & pepper to taste
1 large egg
4 ounces shredded mozzarella
DIRECTIONS
Preheat oven to 350F
Mix all ingredients together and roll into golf ball size balls.
Bake 25-30 minutes or cook in sauces/soups until internal temperature reaches 165F on an instant-read thermometer.
To freeze for soups or stews/sauces:
Place raw meatballs onto a plate or tray lined with wax or parchment paper for a couple hours, then place into an airtight container or plastic freezer bag and keep up to 4 months.
