Ham & broccoli cheese frittata
This low carb ham & cheese frittata is also full of broccoli and is all done in ONE pan! It’s a great way to feed a crowd at once, or, if you’re single like me, a great make-ahead meal to have in the fridge and reheat for a FAST cooked breakfast every day.
I make some kind of baked egg dish at least once a week, because scrambled/beaten is the only way I really love to eat eggs! So to keep things interesting, and mix up what goes in my eggs, I make new keto egg dish recipes all the time.
For the frittata purists, I’m sure you will note this low carb ham & cheese frittata is not a true frittata, which involves pouring eggs over ingredients in a pan, allowing them to cook until edges are set, then placing the pan under the broiler for a few minutes until the top is browned. This version is just about the same, except I add some cream, and some cottage cheese to up the protein, then bake the whole dish without cooking the eggs on the stove top.
I have made a few versions of low carb frittatas, and they have been a hit with my family, but this one is their fave, so far. I hope you enjoy!
INGREDIENTS
8 large Eggs
1/4 cup (60 ml) Heavy Whipping Cream
1/4 teaspoon Creole Seasoning
1/4 teaspoon Poultry Seasoning
1 cup (225 grams) Small Curd Cottage Cheese
1/4 teaspoon Baking Powder (optional, it will fluff the eggs up)
1 teaspoon bacon fat
3 1/2 ounces (97 grams) Cooked Ham, diced
2 tablespoons butter
3 tablespoons (23 grams) diced Red Onion
1 cup (100 grams) chopped Broccoli, fresh
1/5 (40 grams) Green Bell Pepper (optional, I had to use up what I had in the fridge)
1/2 teaspoon Black Pepper
2 Green Onions/Scallions, sliced (25-30 grams)
1 cup (113 grams) Shredded Mozzarella Cheese
1 cup (113 grams) Shredded Cheddar Cheese
DIRECTIONS
1. Preheat oven to 350F.
2. Crack the eggs into a mixing bowl. And in the cottage cheese, heavy cream, and seasonings.
3. On the stove top, heat a nonstick and oven-safe skillet over medium heat. Place the fat into the skillet, then add the diced ham. Cook for a couple of minutes until heated through (or until edges are crispy, if desired).
4. Add the butter and diced peppers and onions to the pan, and season with pepper. Sauté briefly until tender-crisp. Remove pan from heat.
5. Whisk or beat the egg mixture until slightly foamy. The cottage cheese will not blend completely, that’s OK.
6. Sprinkle half the cheeses into the pan and pour the eggs mixture over all.
7. Add the scallions and rest of the shredded cheeses on the top, and bake 35 minutes. It will puff up quite a bit, but settle down after a few minutes.
Makes 6 servings.

Wonderful recipe. We switched out the green pepper with cauliflower that was on hand. Great way to use leftover ham.
