Juiciest Low Carb Pork Chops
The pork chop is a great cut of meat, but because it can lack moisture and flavor, it’s not as tasty. I’ve come up with a great method to yield you the juiciest and most flavorful low carb pork chops you’ve ever had at home.
This low carb pork chop recipe is the easiest recipe on this site, because it’s only a few ingredients and steps.
This is a small batch recipe for 1-3 chops, so double or triple it, as needed.

INGREDIENTS
Pork chops, boneless or bone-in
1/2 teaspoon salt
1-2 cloves garlic
low carb sugar free sweetener such as erythritol or monk fruit (optional)
2-3 drops molasses
a few peppercorns
Just enough water to cover the meat
A few ice cubes
DIRECTIONS
Thaw pork chops, if frozen. Rinse and pat dry. Set aside. Smash the garlic cloves with the blade of your knife and set aside (or just cut each clove in half).
(optional step) If using sweetener:
Place the granulated sweetener in the bowl (about 2-3 tablespoons per every 1 lb of pork chops, or as desired to your preference). Add a couple drops of the molasses, and mash with a fork or stiff silicone spatula until you have created a mixture that smells and looks like brown sugar (kind of tastes like it, too).
In a small saucepan over the stove or microwave-safe bowl in the microwave. Add in the sweetener mixture if using, and heat the mixture to a simmer on the stove or in the microwave. Remove from heat.
In a shallow container large enough to hold the pork chops with enough room to cover, pour in the hot water, garlic, and peppercorns, then add in the ice cubes and stir around until the water is cooled to at least room temperature (cooler is OK, just no longer hot).
Place the pork chops into the container and and cover, then refrigerate for at least 15-20 minutes, or as long as overnight.
Remove the pork chops from the brine and pat dry, then grill or pan-fry as desired.
These brined juicy low carb pork chops taste great with mustard or sauerkraut!
