Corned Beef & Cabbage
This slow cooker corned beef & cabbage recipe is keto friendly and low carb, and easy to make. It also freezes pretty well! If you prefer less tender cabbage, leave it out until the last 1-2 hours of cooking time, simply place it on top of the meat to steam until tender.
INGREDIENTS
1/2 large onion (about 60 grams)
2 1/2 to 3 lb corned beef brisket
1 small head green cabbage
1-2 large carrot
2 celery stalks
1 bay leaf
1 teaspoon each, ground allspice, coriander, ground
cloves, red pepper, black pepper, cinnamon,
cardamom, dill seed, and mustard seed
(or just use the included spice packet as long as it doesn’t contain sugar)
DIRECTIONS
Combine the spices in a small bowl and set aside.
Slice the onions coarsely and core the cabbage, then cut into small wedges. Wash and chop the carrot and celery into thirds.
In a crock pot, layer the onions all over the bottom.
Place the cabbage chunks on top.
Rinse and dry the beef, then sprinkle the spice mixture on each side, patting down well as you go.
Corned beef can be pretty lean, but usually there is a fat cap (fatty side). Place the beef with this side-up in the crock pot for the best results.
Nestle the carrot and celery pieces, then place the seasoned brisket over the vegetables.
Cover and cook on LOW 8-12 hours, or on HIGH 3-5 hours (depending on your crock pot’s temperature). If the meat flakes pretty easily with a fork, it’s ready.
Remove the meat to a platter and let rest 5-10 minutes. Remove the bay leaf and discard. Remove and discard the celery and carrot pieces, if desired.
Slice the beef thinly across the grain and serve with the vegetables and pot liquor. I liked mine with a little whole grain mustard.
This slow cooker corned beef & cabbage recipe also freezes quite nicely, especially if you don’t care whether your cabbage is slightly mushy, as the texture does change slightly, once thawed.
