Round-up for the week – Taco-spiced beef with avocado and hot sauce made a few meals. I whipped up another batch of egg “muffins” with gouda, smoked ham, and peppers, which I have been enjoying with bacon or leftover steak for breakfast (around noon or later).
My first attempt at fat head crust pizza was just OK (been working on a few non-wheat recipes). I find it tastes like a giant, crispy egg with a bit of cheese flavor and I don’t like the taste of eggs much. I also used pork rinds as chips for dipping guac, beef, homemade salsa + chipotle ranch. Lunches have been either skipped because I get too busy with work or I’m just not hungry. Sometimes, I just nibble on finger food to tide me over. So I had some smoked turkey from Kretschmar deli with Jarlsberg cheese, and olives (not pictured). Finally, dinner tonight was more of that lovely beef stew I made last week, made with diced radish (I swear they’re like potatoes) and cremini mushrooms…which freezes and thaws so nicely.

Looks good as always! Are you staying away from wheat because of the gluten or an other reason?
I used to use FlatOut light wraps as a base for pizzas, but they contain wheat, plus soy and flax (both of which are estrogenic and inflammatory). No one needs gluten, period. Here is an interesting video that talks about it:

Wheat products and other starches spike insulin and also cause inflammation. Wheat glutens destroy the lining of the intestines and cause leaky gut.
Here is the other pizza crust I tried: I think next time I make pizza, I will use it again. It tasted much better than the fat head dough
