Sausage and zucchini soup turned out pretty good. I decided to forgo the spinach because it had enough flavor with the zukes and maters and the Italian turkey sausage brought a heap of zest to it, as well.

   Yep. But I let it simmer for a bit longer than the recipe states. I don’t have kids like she does, who may have plainer tastes. I wanted a bit more complex and rich soup than to just heat it through.
