The caldo Xóchitl I made last month froze nicely! I pulled out a couple servings & put in the fridge to thaw this weekend and they were ready today. To serve, I just heated in the micro. Some fresh avocado, hunks of pepper Jack cheese, and cilantro (snipped some leaves and froze those, too–then I just sprinkle some on top of the hot soup and they are perfectly fresh again) made a nice lunch to come home to after running around shopping and stuff on a windy day.
