The white chocolate macadamia nut cookies turned out pretty good. Took a long time to cool because they fall apart very easily. The homemade white chocolate melted a lot more into the dough than I’d hoped even though I froze the chunks, so the pieces are not distinct in the cookies at all. But you can taste it in every couple of bites.

Being these are sugar free and have no wheat flour, they were a bit strange coming out of the oven (very well done in color but still reeeeeeally melty). I will post the recipe soon, but if anyone wants to make them let them sit on the baking sheet until the whole tray is cool, or else you have broken cookies
