Tomato salsa. Pretty basic. Two cans Muir Glen organic whole peeled tomatoes (or one 28 oz. can), 2 cloves garlic, 1 seeded, chopped jalapeño, half of one onion, diced, juice of one lime, handful of fresh cilantro leaves, salt & pepper to taste…sometimes I use white vinegar for the lime juice, at least that’s how country folks do it. Whizzed it with the immersion blender. This made about 2 pints.
