Tried another batch of the crackers last night, this time, I used half fresh grated Parmesan, and half grated extra-sharp cheddar. They were not as crisp, but still very tasty.
I wanted to make them again not just because they tasted good, but also to prove to myself that I could roll them much thinner than the first time. It worked.
