Whenever I chop vegetables for a meal (after they’ve been washed), I add ends or peels that I don’t want in the dish to plastic storage bags and toss them into the freezer. Once I’ve filled a gallon-sized bag, it’s ready to make stock or broth. Pictured here is a quart size bag and almost-full gallon-sized bag, ready for the next batch.
