Homemade Keto Simple Syrup

Keto simple syrup is just as simple as it’s full-sugar counterpart, for what seems like the first time ever, when it comes to keto-fying things, hallelujah!

What better way to enjoy summer than with a chilled cocktail or punch, only totally sugar-free and keto-friendly? Simple syrup is one of those things that just makes drinks on demand much simpler (great name, right?) but to have sugar is a huge no-no for us, even in moderation.

With this keto simple syrup recipe, I’ve made many iced teas, pitchers full of punch, homemade coffeehouse-style drinks, and much more. Just add it to taste whenever sweetness is called for.

INGREDIENTS

1 cup Allulose
1 cup Water
1/8 tsp Xanthan Gum (optional)

DIRECTIONS

In a pot, combine the water and the Allulose. Stir with a whisk to dissolve and allow it come to a simmer.

Once it begins simmering, add the optional xanthan gum by dusting it lightly over the surface. This step slightly thickens and smooths out the syrup. but isn’t necessary. Stir or blend it in, then remove the pan from the heat and allow it to come to room temperature.

At this point, if you wish to flavor your syrup (with things like herbs, fruits, and spices), add them to the hot syrup and let steep until the syrup is cool. Remove the items and pour the syrup in a container or jar. Store in the fridge. .

If making a fruit based syrup, allow the fruit to sit in the hot simple syrup for a few minutes. Then use a potato masher to macerate the fruit and allow it to sit in the syrup until it reaches room temperatures. Strain the pulp and fruit chunks from the syrup before storing.

NOTES:

You can preserve your syrups for longer by adding a splash of higher-proof vodka to the mixture.
