What is Allulose?

Allulose is a naturally-occurring sugar in found in figs and kiwi fruit, that cooks/bakes, caramelizes and preserves like sugar, but does not raise blood glucose levels like sugar does. It is also about 1/3 less sweet. Allulose in this recipe is used with a few drops of pure molasses to create a combination that mimics brown sugar (non-diabetics would not know the difference, but it is safer for diabetics)
